Excerpt from The Encyclopaedia of the Poultry Yard Andalusian Fowl - This fowl is no doubt a native of Spain, whence it found its way into this country, where it was crossed with the Black Spanish variety with the apparent object of increasing the size of its comb, an improvement of very doubtful value. The Andalusian can scarcely be regarded as a desirable bird for table purposes, though it possesses some merits in that di rection; but its great value lies in its powers as an egg-producer, the productiveness of the hens being exceptionally high. Their eggs, in addition to being numerous, are large and of a good avour, and of a white colour. The breed stands confinement very well, and hence is well worthy of the consideration of those who have only a limited amount of space for their birds. Andalusian hens rarely, if ever, evince a desire to incubate, and hence the variety may be included in the category of non-sitting breeds.
