Excerpt from My Slav Friends A magnificent coach was whirled into a courtyard of the Winter Palace by four horses with postillions in the imperial livery. It came to a standstill before a doorway, near which I was standing with a few other correspondents of foreign newspapers, who were enjoying the sunshine of a May morning, before going into the palace to see a sight that will remain memorable to all time: the opening of the first Russian parliament by Nicholas II. "Autocracy puts a brave face on abdication in favour of democracy," said one of the men, as he caught sight of the carriage. An officer in a fine uniform and an ecclesiastic in a blue cassock, whom I assumed to be the gentleman-in-waiting and the chaplain of a great personage, were seated in the carriage with their backs to the horses. A lacquey opened the door of the coach, and the officer got out and stood at attention. One expected to see an exquisite woman, a Grand Duchess crowned with a flaming kokoshnik of diamonds, step from that frivolous shrine of rosewood and lacquer and crystal and red brocade. Excerpt from The Faith of a Quaker There arise also the insistent questions which beset all mystics, and which in Quakerism demanded a corporate, instead of an individual, answer. Was the light infallible? Was the claim to it an assumption of spiritual exaltation. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Classic Russian Cooking is a book that I highly recommend. Joyce Toomre has done a marvelous job of translating this valuable and fascinating source book. It's the Fanny Farmer and Isabella Beeton of Russia's 19th century." -Julia Child, Food Arts Joyce Toomre... has accomplished an enormous task, fully on a part with the original author's slave labor. Her extensive preface and her detailed and entertaining notes are marvelous." -Tatyana Tolstaya, New York Review of Books ... should become as much of a classic as the Russian original... dazzling and admirable expedition into Russia's kitchens and cuisine." -Slavic Review What a delightful discovery this is!... an astonishing and immensely appealing work that will serve adventurous readers and curious cooks." -Nahum Waxman, Owner, Kitchen Arts & Letters What a joy to be introduced to Russia's Joy of Cooking by way of a scholar as knowledgeable as Joyce Toomre, who tells us what it was like to be a young housewife in the days of Chekhov and Tolstoy, feasting in Butter Week before the Great Fast, making pirogs and kvass, hazel grouse souffle [acute accent over e] and 'Drunken' plums, gathering berries, pickling mushrooms. A rediscovery of pre-Bolshevik times." -Betty H. Fussell, author of I Hear America Cooking First published in 1861, this "bible" of Russian homemakers offered not only a compendium of recipes, but also instructions about such matters as setting up a kitchen, managing servants, shopping, and proper winter storage. Joyce Toomre has superbly translated and annotated over one thousand of the recipes and has written a thorough and fascinating introduction that discusses the history of Russian cuisine and summarizes Elena Molokhovets' advice on household management. A treasure trove for culinary historians, serous cooks and cookbook readers, and scholars of Russian history and culture. Excerpt from The Religious Spirit of the Slavs: Three Lectures Given in Lent, 1916; I. Slav Orthodoxy, II. Slav Revolutionary Catholicism, III. The Religious Spirit if the Slavs From his point of view, Tolstoi thought it possible for mankind to stop a mistaken course of things and to begin anew, to cast, away all the burdens of culture, of State, Church, militarism, worldly ambitions, the vanities of towns, to draw the curtain on the past and to come back to the field and forest, to plough and sow, to listen to the life of Nature and to live with Nature and God in unison. Excerpt from On Some Antiquities in the Neighbourhood of Dunecht House Aberdeenshire It was known to the archaeologist that there were ogam inscriptions in the district, two Of them being among the most important in Caledonia; and that within an easy motor drive there was a minuscule inscription of six lines Of which no satisfactory explanation had been given. This inscription they had visited in a previous year. Further, the quick eye Of the hostess of Dunecht had caught sight of some curious sculptures on a stone by the road-side on the way to the minus cule inscription; and other like stones in the neighbourhood had been shewn in Stuart's two volumes of Sculptural Stones of Scotland. The suggestion was then made that for the sake of visitors at Dunecht a sort Of guide book should be prepared, giving some simple description of the several Objects and their meaning and uses.
